Yes, there really is a "Chuck" ..... Charles "Chuck" Rolles graduated from the Cornell Hotel and Restaurant School in 1956. He moved to Hawaii where he opened the first of a number of restaurants that bear his name in Waikiki in 1959. Customers fell in love with the informal atmosphere, the open grills, the all you can eat salad bar, and the high value concept. By combining the finest aged Western USDA prime grade beef with the open hearth cooking Chuck's established its reputation across the country and beyond. And it all started here in Hawaii.

Chuck's Cellar has been around for many years, and we have been lucky enough to have a lot of wonderful staff along the way. Here is some info about a few of our long time employees and some key team members.

Leslie
Whether you last visited the Cellar in the ’70’s or just last night, Leslie may have served you your drink. She is the longest tenured staff member with over 40 years of dedicated, reliable service. She has a daughter and two grand-daughters and loves to craft, especially come Christmas time.

Michelline
Michelline has been the first face that most customers have seen as they walked down the stairs over the past 30+ years. She seems to know everyone, and has therefore earned the moniker “Queen of the Cellar.” She is recognized by the staff and customers alike for her ability to get tasks done quickly. She has a son, a daughter and 4 grand-children. When not at the Cellar she could be anywhere (she moves really fast).

Patty
Patty is genuinely sweet. Really sweet. She has the disposition of an 8 year old girl that owns a unicorn. I’ve never seen a unicorn, but I know they exist because she must have one. She has been smiling and laughing with us for over 15 years. She has played soccer internationally, and still plays regularly. She has three children and 4 young grandchildren.

Virginia
Virginia helps to give Chuck’s it’s “Cheers” like quality. For over 15 years she has she has done more than made your drinks, she has helped you make friends. She is a full-time administrator at Jefferson Elementary, just down the street. She is proud of her three grown children, but misses them.

Brian
Brian’s first job after graduating from Chico State was as a bus boy at Chuck’s Steak House. A couple of careers later he returned to Chuck’s because he missed wearing shorts to work. He has experienced a lot in his 8 years at the Cellar, but thanks to his poor memory he has forgotten most of it. Make sure he writes your order down! You might know his wife Jessica (they met at the Cellar). They have two young boys, Brooks and Bradley.

Sammy
Sammy is an amazing man. Not only can he cook a mean steak, he can cook 200 perfect steaks in 5 hours while standing in a pit of fire and not break a sweat. And his heroic feats don’t stop there… trust me. He has been the backbone of the kitchen for over 5 years. Sammy is a leader in his community and a religious man that loves to spend time with his family. He is raising his adopted son with the help of his girlfriend.

新鮮なお魚
ヘビ、モンチョン、オパカパカ、ナイラギ、オパなど、ハワイでその日取れたばかりの魚を、その日使う分だけ仕入れて提供。ローカルに人気のオノ(写真右)はマイルドな風味とサックリした歯ごたえで魚好きにお勧めです。
